Description

The Bizerba VS12 F is a specialized vertical slicer engineered for high-precision deli applications where aesthetic presentation is a commercial priority. Featuring a 13.80″ hard chromium-plated blade, this manual unit excels at shaving paper-thin slices from large, heavy proteins like prosciutto and cooked hams. The vertical carriage design allows for a natural, ergonomic movement, ensuring the product falls flat for easy shingling or stacking directly onto parchment paper or serving platters.

Sanitation and longevity remain at the forefront of this design, which utilizes a one-piece anodized aluminum base to eliminate food traps and facilitate rapid cleaning cycles. The system includes a high-performance 1/2 HP motor designed for continuous, heavy-duty operation without overheating. Operators can achieve consistent results with the infinitely adjustable thickness knob, which offers a range from 0″ to 0.94″ for versatile menu planning.

Safety is reinforced through a 360 blade guard and a carriage that stays locked during the cleaning process to prevent accidental contact with the sharp edge. The unit also features a remote sharpener that sits away from the food zone, ensuring that sharpening stones do not collect food debris during daily production. This combination of precision engineering and hygienic design makes it a vital tool for high-end charcuterie programs and busy delicatessens.

• Restaurant Size Recommendation: Best suited for medium to large delis or specialty meat shops with high-volume daily slicing requirements.
• Maintenance Advice: Clean and sanitize daily using the carriage lock feature; sharpen the blade weekly using the remote sharpening kaddy to maintain edge integrity.
